Ingredients

Campanelle - or your Choice of pasta

Feta - diced or crumbled

Canned diced tomatoes (with chilies if you like)

Roast Chicken Breast Shredded (I buy a whole roasted chicken from the super market and make multiple dishes out of it.)

Pickled Onion (easy to make with sugar vinegar and sliced onion)

Salt and Pepper to taste

Olive Oil

Balsalmic Vinegar

Spinach

Preparation

Cook the pasta - while cooking Mix Oil, Vinegar, Add shredded chicken, pickled onion diced, tomato, and feta. Rise pasta and add to mixture, salt and pepper to taste from here - feel free to add other herbs to your liking - When I am ready to grab a serving I mix this salad with some fresh spinach - If your salad dried out after being in the fridge ad a little more olive oil to the mix before serving.
