Ingredients

1/2 c Farro

6 oz(9 cups) mixed baby greens

1 1/2 c cooked chicken cut into strips

1/3 c chopped dates

1/3 c unsweetened dried cranberries

2 oz Manchego, shaved w/peeler

1/4 t salt

3/4 c Champagne Vinaigrette

1/4 c chopped Marcona almonds

Preparation

Bring 2 qts of salted water to a boil. Add farro and simmer, stirring occasionally, 45 - 60 minutes, until tender. Drain well and spread on dish to cool. Combine greens, chicken, farro, cranberries, dates, cheese, and salt. Toss w/1/2 c Vinaigrette. Garnish with almonds
