Ingredients
For spice mix
3 Tbsp. cornstarch
2 Tbsp. chili powder
1 Tbsp. salt
1 Tbsp. paprika
1 Tbsp. sugar
2-1/2 tsp. crushed chicken bouillon cube
1-1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp cayenne pepper
1/4 tsp. crushed red pepper flakes
1/2 tsp. cumin
For salsa
4 ripe Vine Tomatoes
1/4 large Onion
1 heaped teaspoon Tomato Puree
1 level teaspoon Sugar
1 tablespoon Olive Oil
1 clove Garlic
1 teaspoon Coriander (leaves)
1 tablespoon Lime Juice
1 teaspoon Italian Seasoning (Oregano, Basil, Dried Red Pepper, Marjoram, Thyme, Rosemary, Sage, Parsley)
1 level teaspoon English Mustard
Good pinch of Salt and Black pepper
For tortillas
1lb chicken breast
Tortillas
Peppers (1 1/2)
1 onion
Preparation
For spice mix
Mix all ingredients in a bowl. Sufficient for 3 meals.
For salsa
Prepare the tomatoes by carefully cutting around the green stalk base and removing it. Now pull the loose skin, it will peel without much effort. Chop the Onion and grate the Garlic clove into a bowl, add the peeled Tomatoes. Mash contents of bowl with potato masher Add rest of ingredients. Stir.
The meal
Fry off chopped onion and peppers in a pan for 10 minutes.
Add 1lb diced chicken breast
Brown off chicken
Add spice mix
Stir repeatedly and cook on a slow heat for 15-20 minutes
Serve with salsa, tortillas, sour cream and guacamole
