Ingredients

2c. Chopped chicken(cooked)

1/2c. Sour cream

8oz. chopped green chillies

2c. mild salsa(divided into 1c. portions)

2c. shredded cheese(divided as above)

1 can black olives(sliced)

4-8(10 in.) flour tortillas

Preparation

Preheat oven to 350 degrees 1.Pour 1c. salsa in to baking dish. 2.combine chicken(or beans), sour cream, chillies, olives, and 1c. cheese in a bowl. 3.Spoon mixture down center of each tortilla. 4.Roll each tortilla and place in baking dish. 5.Pour remaining salsa and sprinkle cheese on top of enchiladas. 6.Back, uncovered, 45 minutes or until cheese is melted and enchiladas are heated through.
