Ingredients
2 cups diced, cooked chicken
1 cup salsa
1 small can diced green chilis
6 flour tortillas
2 cups whipping cream
grated monterey jack cheese with jalapenos
Preparation
Preheat oven to 350 degrees. Mix together cooked chicken, salsa and green chilis. Set aside. Coat flour tortillas in whipping cream and then fill with chicken mixture. Roll enchilada and place in a pyrex dish. Roll all enchiladas and then pour remaining whipping cream over enchiladas until about half-way soaked in cream. Top with monterey jack cheese and bake in oven for 20 to 25 minutes. Serve warm.
