Ingredients

1 lb boneless skinless chicken breasts

1 med eggplant, cut in pieces (leave skin on)

1 can artichoke hearts

2 cups brown rice

1 can diced tomatoes (fire roasted)

1 cup salsa

Preparation

Put eggplant in skillet and let soften. Add in chicken. Cook through. Add artichokes and diced tomatoes. Let simmer while rice is cooking. Add in rice and salsa.
