Ingredients

3-4 chicken breasts or thighs

1 can cream of mushroom soup

1 can chicken stock

1 10oz pack of frozen broccoli or cooked broccoli, chopped

2 Tbs olive oil

2.5 cups rice, cooked

white wine to taste - 1/4 cup more or less

salt and pepper to taste

Preparation

Debone, deskin and cube chicken.

In a large skillet or pot that can hold everything listed, brown chicken in olive oil, salt and pepper to taste.

Mix chicken stock, wine and cream of mushroom soup in a bowl.

After chicken is cooked, add soup/stock mixture to pan, bring to boil.

Add broccoli, return to boil.

Add rice and mix thoroughly.
