Ingredients

1 package Just Chicken (in refrigerator section (not the frozen one) at Trader Joe’s) or 1 boiled chicken, cut into 1/2 inch pieces

3 or 4 Celery Stalks, cut in small pieces

1 cup Golden Raisins

3 or 4 Scallions, white and green parts, cut into small pieces

1 cup Cashews Pieces

Dressing:

8 ounces Plain Yogurt

2 1/2 Tablespoons Yellow Curry

3 Tablespoons Mango Chutney

Salt and Pepper to Taste

Preparation

In a large bowl mix first four ingredients together. Save cashews for later.

Prepare dressing. Pour over Chicken mixture and refrigerate for at least 3 to 4 hours. Sprinkle Cashews on top before serving.
