Ingredients

1 pound boneless chicken breast

2 TBSP Curry powder

1/4 tsp Cinnamon

2 TBSP Olive oil

1 Medium Onion, thinly sliced

2 medium zuchini

1 1/2 Cups chicken broth

1 1/2 cups evaporated Milk

1 1/2 tsp salt

1/4 tsp pepper

cooked brown rice

Preparation

cut chicken to bite size pieces sprinkle with the curry and cinnamon. Set aside Heat 1 TBSP of Oil in large skillet over med. heat add the onion and zuchini cook until soft 3-5 minutes remove from heat Heat remaining oil add chicken and cook til browned 5 minutes Add chicken broth, milk and salt and pepper. Bring to gentle simmer. Return Onion and zuchini to pan heat until chicken is cooked through 5-7 minutes
