Ingredients

1 tablespoon oil

1 onion, chopped

2 teaspoons red curry paste

2 1/2 cups coconut milk

4 chicken breast fillets, sliced

1 red capsicum, chopped

1 cup chopped greens

rice or noodles, to serve

Preparation

Heat the oil in a large frypan over medium-high heat. Add the onion and cook, stirring, for 3 minutes, or until the onion is soft.

Add the curry paste and cook for 1 minute. Add the coconut milk to the pan and let it simmer for 5 minutes.

Add the chicken, capsicum and greens and let the curry simmer for 5 minutes, or until the chicken is cooked. Serve with rice or noodles.
