Ingredients
1 chicken cut into chunks (or chicken breast and tenderloins)
1tbsp chili powder
2tbsp curry powder
1tbsp paprika
1tsp cumin
3 cloves garlic, chopped
2 onions chopped
½ cup cilantro chopped
2 tbsp oil
1 bay leave
1l potatoes, peeled and cut into chunks
1 cup coconut milk
2 cup water
Salt and pepper to taste
Preparation
Heat oil in wok and fry onions and garlic for 1 minute. Then add the chicken and continue cooking for 3 minutes. Add all the spices and stir together well. Add the potatoes. Let cook until chicken and potatoes are tender. Add remaining ingredients.
Adjust seasoning and serve with steamed rice.
