Ingredients
4-Chicken Breasts chopped
2C Chicken Stock (or chicken broth)
2Tbl olive oil
2C Chopped onion
1C chopped bell pepper
2 pounds fresh or canned tomatoes chopped
1C chopped fresh parsley
2Tbl soy sauce
1C chopped green onion
½tbl spoon ground cayenne pepper
1tsp crushed dried mint
Salt pepper to taste
1Tbl minced garlic
1C dry white wine
Preparation
Heat oil in large high walled skillet over medium high heat. Sauté the onions, bell pepper, parsley, and green onions until the onions are clear. Then add mint, garlic, wine and stock. Stir in the tomatoes and soy sauce; bring to a boil. Add the chicken salt and pepper, and bring back to a boil. Turn the heat to low and simmer for at least an hour stirring occasionally.
