Ingredients

4-6 pieces chicken breasts, lightly pounded

1/2 C. flour seasoned salt, pepper, & garlic

1/4 C. butter or EV Olive Oil

2 garlic cloves, minced

1/4 C. white wine

1/2 bunch spinach, trimmed, washed or 8 spears asparagus, trim & cut in pieces (optional vegetable)

1 C. chicken broth

juice of 1/2 lemon

4-6 slices Provolone or Swiss cheese

Preparation

Drench chicken in spiced flour. Saute until brown on both sides. Arrange in baking pan. Bake 15-20 min. 350 degrees. In same pan saute crab and deglaze with wine. Add vegetables, chicken broth, lemon juice and simmer. Spoon a little of the juice over each chicken breast. Top with slice of cheese to melt. Bake 4-5 min. Serve hot
