Ingredients
1cup onion
1cup celery
1cup carrot
2 chipotle peppers
2 tblsp Adobo sauce
cup chicken stock
3 smoked chicken thighs
1 tsp paparika
1/2 tsp cumin
1/2 tsp Rosemary
1/2 tsp blk pepper
2 strips bacon
olive oil
rue to thicken
2 potatoes chopped in cubes
1 can corn
1 can creamed corn
Preparation
Make rue. Saute bacon and chop. Add vegetables and saute in olive oil until softened, add chipolte peppers, adobo sauce, cumin, rosemary and chicken stock Add pre cooked pototoes and corn. Add rue and cream to thicken to desired consistancy, salt and pepper.
