Ingredients

1 lb Chicken cubed

Block of Jalapeño/Monterey Jack Cheese

1/2 Cup fresh chopped parsley

Chili Powder (2-3 shakes)

Oregano- generously sprinkled

Cumin Seed (2 shakes or to taste)

1 Lg jar of salsa (mild, med, or hot)

1 lg jar of Randall’s Great Northern Beans with juice (may substitute)

*Optional: Black beans (rinsed & drained) or frozen corn kernels

Preparation

Brown chicken with parsley & oregano. Put beans, salsa, cheese (cut into small chunks), chicken and spices into crock pot. Cook for 3 hours on high or 5-6 hours on low. Can be prepared the night before and put into crock pot the next morning.

*Modify salsa flavor to adjust heat based on other ingredients.
