Ingredients

2 1/2 lb. chicken – cut up

1/4 c. flour

1/4 c. vegetable oil

1 med. onion – coarsely chopped

1 med. green pepper – coarsely chopped

1 clove. garlic – minced

1 1/4 tsp. salt

1/8 tsp. pepper

2 bay leaves

16 oz. tomatoes

8 oz. tomato sauce

1/4 c. white wine – dry

2 tbs. parsley – chopped

Preparation

Coat chicken with flour. Preheat frypan to 375 - add the oil. Cook chicken until lightly browned, turning occasionally. Remove chicken. Saute onion, green pepper and garlic in the oil. Return chicken to pan. Add salt, pepper, bay leaves, tomatoes, tomato sauce and wine. Cover and simmer 30-35 minutes, turning occasionally. Garnish with parsley.
