Ingredients

6 chicken breasts

2 tbsp olive oil

8 oz mushrooms

Red and green pepper

Onion

Garlic

½ cup white wine

¼ tsp red pepper flakes

28 oz diced tomatoes

2 tbsp tomato paste

2 tbsp lemon juice

2 tsp basil

1 tsp sugar

1 tsp thyme

Salt and pepper

Preparation

Brown chicken in oil, then remove. Add veggies and sauté lightly. Add wine and red pepper flakes and simmer til almost evaporated. Add tomatoes with juice and remaining ingredients. Return chicken to pan. Simmer uncovered for 15 minutes. Serve with pasta.
