Ingredients
2 lbs. boneless,skinless chicken thighs
1/2 chopped onion
3 garlic cloves chopped
1 chopped carrot
2 russet potatoes, peeled and chopped in large pieces
1 bell pepper chopped (red or green)
1 tablespoon spanish olives
1 tablespoon capers
1 12 oz. can tomato sauce
1/3 cup water
salt & pepper
drizzle of olive oil
Preparation
Combine all of the ingredients in the crockpot and heat on LOW for 5 hours. Enjoy!
