Ingredients
1 pkg frozen broccoli
2 cups chopped cooked white chicken
1 can cream of mushroom (or whatever cream soup you prefer, you can pick a low carb one)
1/2 cup milk or half-n-half
glob of mayo (about 1/4 cup)
3 tbl yellow curry powder
shredded cheddar cheese (about 1 cup)
Preparation
Steam pkg of broccoli for 5 minutes. Place on broccoli on bottom of greased/sprayed casserole dish.
Place chicken on top.
mix rest of ingredients (except cheese) and pour over the top.
Sprinkle cheddar on top.
Cook for about 1/2 hour or until cheese is bubbly/browned.
