Ingredients

6 boneless chicken breasts~ flatten slightly

8 oz mild goat cheese (e.g. Cabriale or Montrachet)

1 Cup good quality Pesto

Preparation

Flatten chicken breasts between waxed paper. Spread with some of the pesto and then equally divided amounts of goat cheese. Roll the breasts tightly and place, seam side down, in oven proof baking dish. Spread with remaining pesto. Bake at 350* for 30 min or until done. Let rest 15 min before slicing. Serve over pasta if desired.
