Ingredients

4 chicken fillets, slightly flattened

3 tbsp rapeseed oil

4 tbsp Tiptree Orange Marmalade

1 tbsp ginger, peeled and finely chopped

2 cloves garlic, peeled and finely chopped

3 tsp Tiptree Organic Chilli Mustard

50 mls freshly squeezed orange juice

Sea salt and black pepper

Bunch of chives, finely chopped

Preparation

Heat a heavy-based frying pan. Heat 2 tbsp rapeseed oil; season the chicken on all sides with sea salt and black pepper. Place in the heated oil and cook on a medium heat for 3-4 minutes on each side, or until cooked through. Meanwhile combine the marmalade, ginger, garlic, mustard and orange juice and the remaining rapeseed oil. Then add this mixture to the chicken breasts and simmer gently for 2-3 minutes, taking care to not to let the sauce burn.
