Ingredients
1 head of garlic
16 oz. diced tomatoes
1/4 cup fresh parsley
3 tbsp olive oil
1.5 lb. chicken breast
1 dried red pepper (subst. cayenne pepper)
Preparation
Mince the entire head of garlic and the parsley. Chop the chicken into bite-sized pieces.
Cook garlic in pan with olive oil at medium heat, until the garlic is a medium brown. Take pan off heat and let sit for two minutes.
Add tomatoes to pan. Cook until the tomatoes soften, approx. 15 minutes at medium heat. Stir slowly.
Add chicken and pepper. Cook approx. 10 minutes at medium heat.
Add parsley, serve immediately over pasta.
