Ingredients

1/2 cup of olive oil

1/4 cup apple cider vinegar

2 peeled garlic cloves

1 apple sliced in small sections

1/4 cup honey

5 cups shredded romaine lettuce

12 oz boneless breast of chicken

1/2 cup of shredded carrots

1/2 cup each black berries, blue berries and strawberries

1/4 cup sesame seeds

curry powder

salt & pepper to taste

Preparation

Puree olive oil, apple cider vinegar, garlic, apple and honey in a food processor until mostly smooth with tiny bits of apple. Season with salt & pepper set aside. Cut chicken breast into thin slices and lightly sprinkle with curry powder. Saute’until done, remove from the pan and set aside. Toss remaining ingredients together with cooked chicken. Drizzle with vinaigrette and serve.
