4 Chicken breast grilled, cubed and cooled
1 package Uncle Bens long grain and wild rice cooked and cooled
1/2 cup celery
1/3 cup parley
1/4 scallions
Vinegrette
1/2C olive oil
3T red wine vinegar
1 1/2 tsp dijion mustard
1 tsp salt
1/2 tsp pepper

combine first five ingredients. whisk together vinegrette and toss with first five ingredients garnish with pine nuts and chill 2hrs
