Ingredients

2 Med onions

2 stalks celery

2 lg carrots

3 cloves garlic

2 Tbs olive oil

28 oz can dices tomatoes

32 oz chicken broth

1.5 C red cooking wine

8 oz tomato sauce

1/2 tsp oregano

1 tsp basil

1/4 tsp thyme

1/4 tsp sage

3 halves chicken breasts (1.5 breasts)

12 oz 3-cheese tortellini

1/2 pkg frozen chopped spinach

parmesan cheese

Preparation

Sautee first 4 ingredients in olive oil, then add next 8 ingredients and simmer for about 1 hour. Add chicken, cut into medium chunks, tortellini, and spinach (thawed). Simmer 15 minutes. Serve with grated parmesan.
