Ingredients
1 Chicken
1 package of Smoked Turkey Sausage
1/2 cup celery chopped
1 onion chopped
1 bell pepper chopped
2 cloves garlic chopped
parsley chopped
1 bay leaf
1 can 14.5 oz diced tomatoes
1 cup rice
creole seasoning like Tony Chachere’s
Preparation
Boil chicken in stock pot until cooked. Take out and let cool and debone. Save 1 1/2 cup of chicken water and put to the side. Discard the rest of water and use the same pot. Cut sausage into bit size pieces and brown. Add next the four ingredients and cook until soft. Add rice, chicken,1 1/2 cup chicken water, tomatoes with juices, bay leaf, and season to taste. Cover and let cook for about 15 minutes on med setting. Add parsley and stir in well. Cover and let cook until rice is tender about another 10 minutes.
