Ingredients

1 chicken breast

Olive Oil

Salt and Pepper

1/2 can condensed cream of celery soup

1/2 can condensed cream of mushroom soup

1 packet dry onion soup mix

1/2 cup rice

1 cup water

1/2 to 1 cup crushed crackers or breadcrumbs

1/2 cup sour cream

Preparation

Cut chicken breast into bite-sized pieces and season lightly with salt and pepper. Brown very lightly in small frying pan with a bit of olive oil, just until the pink is gone.

Pour rice into casserole dish. In a small bowl, combine soups and water (yes, it will look disgusting). Pour watered soup over rice (Yes, it will look even more disgusting). Take each chicken piece and spread sour cream over it, then place on top of the rice/water/soup. Sprinkle liberally with crushed crackers/bread crumbs. Sprinkle onion soup mix (1/2 to a whole packet) on top. Cover tightly with tin foil and bake at 375 for an hour or so. Serve with canned corn on the side.
