Ingredients

1 package chicken pieces, bone in, skin on or 1 whole chicken cut into 8 pieces (2 thighs, 2 legs, 2 breasts pieces cut in half)

1 1/2 pounds small yukon old potatoes cut into 1 inch pieces

4 tablespoons garlic paste

3 springs rosemary, leaves removed and roughly chopped

Extra virgin olive oil

Salt and pepper

Preparation

Preheat oven to 425 degrees.

In a roasting pan, mix the chicken, potatoes, garlic & rosemary. Drizzle liberally with olive oil and season with kosher salt and fresh ground pepper. Transfer to oven and roast for 30-40 minutes or until the chicken is cooked through and the juices run clear.
