Ingredients

2 Grapefruits

1 Avocado

1 Head of “butter” or other high quality lettuce

1 cup of cooked chicken

1 cup of roasted cashews

Sesame Dressing to taste

Preparation

Wash and dry the lettuce. Tear or chop into pieces. Cut the grapefruit into quarters and use a paring knife to cut the pulp from the rind. Cut into cubes. Cut the avocado into cubes.

In a large bowl, toss lettuce with enough dressing to coat. Add remaining ingredients and toss. Serve immediately.
