Ingredients
-2 tsp extra-virgin olive oil
-1 lb fennel bulb(s), quartered, cored and thinly sliced
-1 red bell pepper, thinly sliced
-8 oz boneless, skinless chicken breasts
-16 oz premade pizza dough
-4-8 oz mozzarella cheese (depending on how cheesy you want it)
Preparation
Preheat oven as per pizza dough directions (usually 475 degrees F)
Heat oil in a large nonstick skillet over medium heat. Add fennel and bell pepper and cook, stirring often, until the vegetables begin to soften, about 5 minutes. Add chicken and cook another 5 minutes, stirring often, until the vegetables are tender and the chicken is cooked through.
Prep and form dough into pizza base and spread cooked ingredients over surface. Top with mozzarella cheese and bake until cheese is lightly browned (about 15-20 minutes).
