Ingredients
1 two -three pound roasting hen
1 1/2 C flour
3 Tbsp shortening
1 egg
5 Tbsp of water
Preparation
Boil chicken until tender. Remove meat from bones and let stand.
Cut shortening into flour. Mix water with egg and add to flour/shortening mixture. Stir until a soft dough forms. Break into three balls of dough. Roll each ball out on waxed paper until thin. Let dry about 20 minutes. Cut into small strips and break into boiling broth. Cook until dumplings are tender. Add chicken into dumplings and stir gently .
