Ingredients

1/2 cup Dried Cranberries

3 tbsps Olive Oil

1 tbsp Lime juice

3 cups Sliced smoked chicken breast

1/3 cup Toasted almonds

3 Celery ribs, sliced

1/4 cup Fresh cilantro

Preparation

  • Soak cranberries in a bowl of warm water for 15min, drain and chop

  • Whisk together oil and lime juice in med bowl

  • Add cranberries and remaining ingredients

  • Salt & pepper to taste

  • Toss to coat
