Ingredients

1 bundle of Bok Choy, washed (greens chopped and stalk thinly sliced)

1 red bell pepper, thinly sliced

3 cloves of garlic, minced

1 small onion, thinly sliced

1 chicken breast, thinly sliced

1-2 tsp crushed red pepper flakes

1 Tbsp olive oil

1 tsp coriander

salt and pepper to taste

Preparation

Heat olive oil in a large skillet on medium heat. Add onion and saute for 1-2 minutes. Add garlic, chicken, bell pepper, bok choy stalk, crushed red pepper flake, and coriander and saute until chicken is cooked through and vegetables are tender. Add the bok choy greens at the end just to wilt them slightly. Add salt and pepper to taste.
