Ingredients

Fresh side of bacon (w/skin & meat, bones); at Hi-Lo or Mkt Basket)

1/2 lb. extra lard

salt

chopped scallions

lime juice

chile (fresh or powdered)

Preparation

Cut bacon in 1.5" squares. Fry with lard on low heat for 1.5 hrs, covered, turning occasionally. Uncover and turn heat to med for about 40 min. When pcs start to float, crank heat to med high for 10 minutes. Drain & add salt & scallions. Serve with salsa verde, picado de rabano, tortillas, lime juice, hot chiles.
