1 lb minced pork

2 tsps whole green peppercorns

3 kaffir lime leaves, shredded finely

2 tbsps fish sauce

1 tsp brown sugar

10-15 fresh basil leaves

salt & pepper

i large red chilli, deseeded & cut in tiny strips

Paste…

5 garlic cloves, chopped

4 large chillies, deseeded & chopped

2 tsps finely chopped coriander root

3 tbsps groundnut oil

1 tbsp hot water

Preparation

  1. Put all the ingredients for the paste in a blender and blend until smooth. Transfer this paste into a wok or frying pan. Heat and stir continuosly for 4 minutes.

  2. Increase the heat and add the minced pork.Stir continuosly for 3 minutes. Add the rest of the ingredients except the basil and chilli strips and continue stirring for 3 minutes more until the meat is almost dry.

  3. Add the basil leaves and stir once. Adjust seasoning. Serve hot with rice or a salad, garnished with chilli strips.
