Ingredients
1 - 1.5 lbs Tilapia fillets (or another white firm fish)
4 cups Chex Mix
2 eggs
Mustard Sauce
2 Tblsp butter
1 leek, thinly sliced
4 Tblsp hot mustard (Spicy brown - whatver you like)
1/2 cup white wine
juice of 1/2 lemon
1/4 cup heavy cream (optional)
Preparation
Preheat oven to 400 Process Chex Mix in blender or food processor until crumbly (some larger bits will remain - that’s OK) Mix eggs in one bowl. Dredge tilapia filets in egg, then in Chex Mix until well coated. PLace on baking sheet. Bake 7-10 minutes a side, until cooked through and flaky
Meanwhile, saute the leek in the butter until soft Add hot mustard, white wine and lemon juice; cook 5 minutes until heated through. Add cream, cook 2 minutes more until sauce thickens.
Remove fish from oven, top with mustard sauce and serve.
