Ingredients

1 1/2 cups plain flour

1 1/2 cups raw sugar

1/2 cup cocoa

1/2 cup of golden syrup

125gm of butter

1/2 tsp of bicarb

1/2 tsp of vanilla essence

1Tbs of boiling water

Preparation

Mix flour, sugar and cocoa together in a bowl, make a well in the centre. Heat golden syrup and butter in a saucepan until the butter has melted. Put bicarb in a cup, add vanilla essence, and boiling water, swish around, and then pour into golden syrup mix (it will foam up). Tip wet into dry, stir well (it should end up quite a firm mix, if it’s falling apart, add a bit more golden syrup). Roll small balls (inch diameter) out in your hands and place on oven trays, cook at 170 degrees for about 15-20 minutes.
