Ingredients
1/2 c. flour
3 lbs. chicken, cut up or boneless
1/2 c. veg. oil
1 - 8 oz. can tomato sauce
1/2 c. dry red wine
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
4 garlic cloves minced
2 red bell peppers sliced
1/2 lb. mushrooms sliced
1/2 c. grated parmesan cheese
Preparation
Flour chicken. In large pan, cook chicken until brown. Remove to 13x9" baking dish. Mix sauce, wine, salt, oregano, and pepper in a bowl. Add garlic to pan drippings, saute for 1 min. Add peppers and mushrooms and mix. Cook 5 minutes. Stir in sauce and pour over chicken.
Bake at 350 degrees for 45 minutes, covered. Add parmesan.
