Ingredients

3 cups chopped roasted chicken breasts

2 cups pitted sweet cherries

1 cup chopped peeled English cucumber

1/3 cup thawed frozen peas

1/4 cup chopped celery

1/4 cup chopped red onion

1/4 cup chopped carrot

3 T chopped pecans, toasted

2 T chopped scallions

2 t fresh chopped tarragon or 1/2 tsp dried

Dressing:

1/2 lb silken soft tofu

1/4 cup red wine vinegar

1 t fresh thyme leaves

S&P

red pepper flakes

Preparation

Combine salad ingredients. Combine dressing ingredients in blender. oproces until smooth. Pour over chiccken mixture.
