Ingredients
Salad:
2 cups pitted and halved fresh cherries
1 cup thinly sliced radish
1 cup thinly julienned carrots
½ cup thinly sliced celery
¼ cup thinly sliced scallions
2 tablespoons chopped fresh parsley
16 leaves lettuce leaves
4 teaspoons toasted sesame seeds
Dressing:
3 tablespoons red wine vinegar
2 tablespoons lemon juice
1 tablespoon oil
1 tablespoon sugar
½ teaspoon salt
½ teaspoon lemon zest
1/8 teaspoon crushed red pepper flakes
Preparation
For the dressing: Blend all the ingredients together mixing well.
For the salad: Combine cherries, radishes, carrots, celery, scallions and parsley together. Toss in dressing. Place 4 lettuce leaves on each serving plate, top with 1/4th of salad. Sprinkle with sesame seeds.
