Ingredients
Cake:
1 box white cake mix (pudding recipe)
1/2 cup maraschino cherries, minced by hand or Cuisinart,
and drained of juice.
( reserve the juice)
Frosting:
1 pkg. powdered sugar
1/2 cup unsalted butter, softened.
1/2 maraschino cherries, minced and drained as above.
Red food coloring, dash.
1 tsp. vanilla
1/4 cup milk
Preparation
Prepare the cake according to box instructions with the exception of the water. Substitute with the reserved cherry juice. Add in the minced cherries. Bake in two 8 or 9 inch pans, as it makes for a prettier presentation.
For the frosting: Blend the butter and vanilla in a mixer until fluffy. Alternate the powdered sugar and milk until of adequate spreading consistency. You may not need all the milk, or you may need a little bit more. Blend in enough food coloring to give a pretty pinkish color. Stir in minced cherries.
Frost the cake. Garnish with halved cherries is desired. Sprigs of greenery, like mint or other herbs are nice as well.
